Souvlaki

souvlaki

Souvlaki is one of the most popular street foods in Athens. Souvlaki is basically pieces of marinated meat and vegetables, pierced with a wooden stick and then fried on the grill. It is common to eat pork, lamb and chicken souvlaki, however, there are many other varieties.

Ingredients:

  • Pork (1kg)
  • Onion (1)
  • Dried rosemary (3 gr)
  • Dried thyme (3 gr)
  • Garlic (3)
  • Olive oil (75 ml)
  • White vinegar (25 ml)
  • Salt
  • Black pepper

We cut the pork into pieces. We place them in a bowl and add the onion cut into quarters with the layers separated. Add the rosemary and thyme, the oil, the vinegar, the grated garlic cloves, salt and black pepper. We marinate for at least 30 minutes.

Meanwhile, soak some wooden skewers in a long bowl of water. We pass them through the iron, so it is convenient that they are wet so that they do not burn. After the marinade time, thread the pieces of meat onto the skewers, alternating with pieces of onion. We mark the skewers on a very hot grill, on all sides, until the meat is well done and browned.
